Creamy Chicken Fettuccine

What you’ll need (serves 2)

1 large chicken breast (150g)

150g fettuccine

100g Chobani Fat Free Greek Yoghurt

1 cup diced pumpkin

2 tablespoon (10g) basil paste or chopped fresh basil

1 tablespoon seeded mustard

½ teaspoon ground nutmeg

Time taken – 18 minutes

How to make it

Poach chicken – Place chicken breast in saucepan and add boiling water till it just covers chicken. Bring to the boil and then reduce to low heat, cover and simmer for 15 minutes till chicken is cooked through (if chicken breast is quite thick, use a knife to slice the breast down the middle before cooking to ensure the centre is cooked thoroughly).

While chicken is poaching cook fettuccine according to packet instructions (cook in boiling water for 10-15 minutes)

Once chicken is cooked thoroughly remove from saucepan and gently pull apart into small pieces.

Drain fettuccine and return to the saucepan.

Combine all ingredients and mix thoroughly in the saucepan over low heat for 1-2 minutes until warm.

Serve and enjoy!
